Spinach Yogurt Soup


This Spinach Yogurt Soup made with Karoun's Plain Yogurt has been known as a promoter of longer lives and better health because of all the nutrients and cultures that our rBST free yogurt contains. Spinach, so rich in flavonoids that help fight cancerous cells and eye-loving lutein, makes a lovely partner with yogurt in this warm and creamy soup.

Ingredients:
● 3/4 cup Karoun Plain Yogurt
● 1 1/2 tablespoons Karoun Butter
● 1 medium onion, finely chopped
● 2 teaspoons all-purpose flour
● 1/3 teaspoon salt
● 1/4 teaspoon dried tarragon
● 1 pinch ground nutmeg
● 1 pinch cayenne pepper
● 16 oz. package frozen chopped spinach
● 2 cups chicken broth
● Fresh mint leaves and/or marinated sweet bell peppers for garnish

Directions:
1. Melt Karoun Butter in a large saucepan over medium heat. Add the onion, and cook until tender. Stir in the flour, salt, tarragon, nutmeg and cayenne, and heat until fragrant.
2. Stir in spinach (undrained) and chicken broth. Bring to a boil, then reduce heat to low, and simmer for about 15 minutes.
3. Remove the soup from the heat, and puree in a food processor or blender in batches. Return to the saucepan, and whisk in Karoun Yogurt. Heat through, but do not boil. Taste and adjust seasonings if necessary.
4. Ladle into bowls, and garnish with fresh mint leaves and/or marinated sweet bell peppers.
