Grilling Cheese Salad

Yanni Grilling Cheese can add great flavor and fun to any salad. Grill the cheese and add arugula, onions, thyme and tomatoes, and mix with a vinaigrette dressing. Enjoy this incredibly tasty and healthy salad as a side dish to any meal, or as your main course.

Ingredients:

  • 10 cherry tomatoes
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 lb Yanni Grilling Cheese, 1/4 inch slices
  • 1 bunch arugula
  • Salt and fresh ground pepper to taste
  • 1 red onion, sliced
  • 2 tbsp thyme, chopped
  • Juice of 1 lemon
  • 2 tbsp balsamic vinegar
  • 3 tbsp extra virgin olive oil

Directions:

1. Preheat oven to 350° F. Lay the tomatoes on a baking sheet and sprinkle with salt and freshly ground pepper, the balsamic vinegar and the olive oil. Roast about 1/2 hour and set aside.
2. Pulse blend the lemon juice, olive oil and vinegar until emulsified. Add salt and pepper to taste. Set aside.
3. Heat a griddle pan over high heat. Griddle the Yanni Grilling Cheese until a good dark crust has formed.
4. In a serving bowl combine the arugula and thyme, roasted tomatoes and freshly griddled cheese. Toss together with the vinaigrette and serve immediately.
